- 80 ml sake
- 80 ml soy sauce
- 1 tablespoon sugar

- 1/2 - 1 teaspoon salt

- Cut the radish to the desired thickness and pre-boil. Prepare the horse too. Boil hard and peel the eggs.

- After 2 hours of cooking, the beef veins should be soft enough to be easily bottled. The broth is also seasoned with beef veins.
- I always leave the radishes, eggs and pork overnight to taste. The next day the oil will come to the surface and harden, remove it.
- Reheat the next day, add more stone broth and the desired fish cakes (e.g. chikuva and gobo maki), bring to a boil again, ready!
- The oily beef tendrils and daikon radish that soaked the beef stew all night were delicious! Mustard and bell pepper go well with it.
- It's still delicious if it doesn't stay overnight, but in that case, be sure to remove the oil from the surface in step 13. The soup turns out clean and tasty.
- Gobo maki (burdock root fish paste sticks) and chikuwa fish sticks are perfect for this oden. Mochi kinchaku (mochi rice cakes in a fried tofu bag) is delicious because it is soaked in beef soup. My favorite is Chikuva.
